Macaroni Salad



Ingredients (serves 4-5)
250g cut macaroni
3 stalks celery, chopped
200g crab flavored pallock
1 red pepper, chopped
5 tablespoons low-fat mayonnaise
1 cup low-fat natural flavour yogurt
1/2 teaspoon salt
  1. Bring a pot of lightly salted water to a boil. Add macaroni and cook for 10 minutes, until tender. Drain and set aside to cool.
  2. In a large bowl, stir together celery, red pepper and crab flavored pallock.
  3. Mix mayonnaise and yogurt in a small bowl. Taste and adjust seasoning.
  4. Combine in the bowl and stir in macaroni until well blend.
  5. Cover and chill at least 1 hour before serving.
